How do I get drywall dust out of my house. (i.e. carpets, surfaces, etc.)?

Most advanced VAC technology to date will be your best option. HEPA filters. Certainly you may need a supply of them? Then bag them in trash bags and dispose.
Damp wiping helps on solids, and again, dispose, don't rinse in your sink.
I'll assume it's too late to suggest ways to collect the DUST from the process of sanding? No matter, most of the smallest particles would have been in the air anyway. You'll also have to check and likely change AC filters, perhaps more than once,,, and in that regard spend some extra money on any,,, other than the blue spun fiberglass type.
Shop vacs, and reg vacs, have discharge, in order to function, and filtration in a tank/upright is often no more than a paper bag. Shop vacs have an even greater rate of discharge but some have actual filters, as opposed to the foam sleeve that slides over the motor area. Again, collect and dispose

eureka forbes dust sucker(vaccum cleaner dry) can be used like you have been using at home for cob webs and all ..it will sauck .do not use in opposite direction .i mean pushing out.
vacummn with a hepa fiter which is gonna want to plug up unless washable.
vac with shop vac & try run hose from blowhole to outdoor, its gonna recycle some dust. have fun!

oh what a mess you have on your hands. Back a few years ago we did a bunch of drywall in our house. we even hung up plastic and boy did i still have a mess on my hands. I was forever washing everything down and using the vaccuum. I really dont know what else you can do . good luck
