right you like things clean , i was a chef , so this will work for you .
get some ice cubes , heat your pan to full temp on you cooker / wrap the ice in a old towel, then run the ice pack over the carbon, cos thats wot it is , and it should just fall of . you can use this tip for cleaning your iron as well it does work and works a treat . one thing try not to burn your self .

When mine gets that way i clean it rreal good then put oil on it and dry it while the oil is still on it
Just wipe it off as best you can.
As a rule you should never really wash a cast iron pan. They build up a nice patina over time and are really the best for searing and browning. Wash then if you must when they are very very dirty . Then dont let it air dry. Put it on the stove over a low flame for 5 minutes or so...
Put it under really hott water
&& put some soap or whatever stuff you use to clean you dishes in. Let it soak for about 15mins then you should be able to just get it off with a SOS pad or something
use over cleaner, it worked great for me. Let it soak in for a few hours and wash. Repeat if needed.
