How do you get a cigarette smoke smell out of an apartment that you just moved in?

All great suggestions but if they were there for a long time, the smell and stains will actually be absorbed by the walls and ceilings. Nothing you can really do in this case except paint. Beware, if the colour is too light, the stains will resurface.

Open all the windows, febreeze everything, and cook some strong-smelling food. Also, get rid of any furniture left there with the smell on it.
Any fabric items like carpets will retain smoke smell. Are the tops of the walls discoloured? You probably should wash the walls too. Use a mix of bleach and sudsy hot water (not too many suds) and wash the walls using a sponge mop. Be sure to protect the floor from the bleach. Cigarette smoke finds greasy things and attaches itself, so ensure the tops of all kitchen cupboards are grease/smoke free. If you try to add a smell over the smoke smell, it can smell even worse. Clean all surfaces and steam clean the fabric items.
They sell Lava Rocks in a mesh bag at places like bed bath and beyond. They really work well at absorbing smells. I also know that having unbrewed coffee grounds in an open container also work but you may need to use alot. Maybe just painting the place will help. If theres curtains, take them down and wash them. Rent a carpet cleaner and clean the carpets. Open all the windows and really let the place air out for a few weeks,

Good luck, smoke smell is nasty and tough to get rid of. But time itself will help to dissipate the stink.
Clean everything washable, then set little 1/2 cups of ammonia around. It will smell bad at first but then the odor will go away and so will the smoke smell...
buy lots of fabreeze! just went through that with a friend of mine. she has been in it for 2 weeks. we washed the walls. cleaned the carpet. and sprayed the entire apartment with fabreeze for 3 days before we moved anything in. she still spritzes it down at least 2 times a day and says that it's nearly back to a non-smoker apartment.
