I appreciate all the answers. This floor really does not look right to me. But, I just want to make sure what level of imperfection is acceptable. I want to be sure that I am not acting too picky.

Are there any means/methods for me to be sure.

Answers:
Trust me your not being to picky you paid good money on labor to put that floor down if he charged you labor he is considering himself a pro and the floor should be perfect that is why they use thin set under the tile as glue it allows you to level the tiles and have a nice flat surface to check hold a peiace of masonary string tight across the surface and you will see highs and lows looking from the side!

Any uneven tiles done by a good tile setter in not acceptable. Your pro you had probably didn't level the floor properly. Tile is usual applied over a mortar base, and if that base is leveled correctly, the tiles go in level also.
I am a proffesional tile installer for over 30 years, and no level of imperfection is acceptable. Esspecially with porceline tile as it is gauged to be exact, so it should be installed as such. If the floor is level and flat with no bumps and humps the tile should lay flat and even, if the spacing of the joints is off its the fault of the installer. You are paying a much higher price for porcelen , be picky and demand perfection. thats what your paying for.
Take good pictures of the floor. Make sure they really show the imperfections.

Go to the court house and file a small claims suit. This is not expensive, usually less than $100 to file and have the summons delivered by a sheriff deputy.

If this guy has any brains he will correct the problem before going to court. With the pictures a proof, he will loose. If he doesn't pay you the court ordered settlement then you can put leins on his business and everything he owns until he does pay. Businesses need lines of credit with suppliers to survive. Go the the Home centers and other suppliers and give them copies of the leins and his credit will go away real fast. It will also go on his credit history.
put a level on the tile,a sure way to see imperfections
Tile should look good if you are standing up. some imperfections may be seen if you get down on the floor. If it looks bad standing up its not correct. It will not cost much to fix 12 tiles, about 1 to 2 hours time for the tile setter. Not a big deal to fix. It should be fixed at no charge to you. I sell tile and my customers expect better.
