tile installation?

I decided to go for a professional job, rather than doing it myself. I had my 200sqf kitchen (3/4" plywood + 1/4" cement board, with minor levelling imperfection) tiled in 5/8" porcellaine tile.

The job was finished just yesterday. I already see at least over a dozen tiles set either higher or dipped.

In some cases, one corner of a given tile is dipped, while the
other corner of it is standing higher. You can slide a tile against these, and it would just bang into the side and stop.

The company who installed the tile, tells me that is normal and acceptable.

I do not thinks so. Could I get some advise here.

It was installed improperly, definitely not acceptable!
Get another contractor for a second opinion...call your contractor again and tell them a professional floor contractor inspected the floor and said it was improperly installed... that they have to come back and repair it... if they refuse, tell them you are contacting the Better Business Bureau...and/or taking them to court.
Take pictures and document everything.
