What is the best suggestion for walls in a mud room?

I have an aversion to anything that is not easily changed, so I wouldn't do panelling. It is a real problem to remove. I would consider either a high gloss or marine paint on the lower half of the wall. Do the upper wall in a regular sheen--eggshell or satin and put up some kind of border between the two. For example, chair rail or a wallpaper border.

go to a building supply store like LOWE'S or HOME DEPOT. in the bath and shower dept you can buy pannels made for tub and shower surrounds. you can put them up with construction adhesive and are extremely easy to clean and care for. they will never rot and will never need paint. if you put in a tile floor and a floor drain you could just hose the place down when it gets dirty.

I would tile up to about 3.5 - 4 ft high and put a painted chair rail molding on the top of the tile
Why not apply beadboard paneling half-way up the wall? You could stain it and apply a marine varnish or use an oil-based enamel, either of which is great for durability and washability. I would still paint the upper portion in some type of semi-gloss that is recommended for high traffic areas to make for easy clean up behind grimy handprints. You might even try using chair railing with pegs to trim it up. I saw this in a mudroom in Minnesota and it was great. Actually, the same trim was used at the top with hats, scarves and coats hanging from them, and the lower ones were used for mittens, doggie leashes (one even had a basket hanging from it with those ice scraper things in it).
