If you do a much darker/much lighter grout than your tile, you are reinforcing the grid pattern in which your tile is laid (this can produce interesting effects when you have different sized tiles in a pattern).
If you do a matching grout to your tile, then your tile itself will stand out.
As far as the grout lines go, it's dependent on the tile. Certain types of tile you can do a smaller grout line, most are just a standard size. Have your tile person decide what's best for you and the tile you have chosen.
(as a side note: when we do tile - 99% of the time, we do matching grout; if you aren't careful about the lighter/darker grout it can look dated.)
