I dint upholster much, i mostly sew handbags and such, but i would say like a tweed, or some kind of heavy woven material.... good Q... most restaurants use vinyl for easy cleaning....

A tightly woven fabric - tapestry or tweed.
Spend some time in a local fabric specialty store and feel the differences. Also since you're talking about a restaurant, spell the fabric. Most are made overseas and have a terrible odor.
Also try to find something with a scotchgard type of finish.
tweed if you want to stay away from leather. Make sure it is stain resistant in some fashion. Also be sure to pick a dark color or you are going to have to replace the covering every 6 mos to a year.
