What can I use to cover ugly mirror panels over my bed?

you could always attach some strapping to the mirrors using "liquid nails", then attach the fabric to the strapping
You don't say if this is your property or a rental, so I'll suggest some quick fixes. To utilize the panels, you could purchase one of the wrought iron pieces large enought to cover it and the mirror would only reflect the light back into the room...a good thing. You could also buy some 1x1" stakes and build a frame large enough to cover the entire area. Find a piece of tapestry that will enhance your decor or even a rug which can be stapled over the frame and mounted to the wall. Another thing would be to mount shelf brackets on either side and have glass shelves cut to fit. Just make sure that the art objects you display on them are secured to the shelf with double-sided tape to avoid a possible head concussion (LOL). I always try to take the negatives in my life and turn them into positives. Good luck with your new place!
You could ue some of that window film stuff that makes windows look like stained glass or clouds or wahtever. Your idea of fabric sounds nice. Just use starch and smooth it out with a drywall brush. You could also put shutters over them. Or get a piece of ply and have someone jig out a scrollwork pattern. Treat it like a window, and put curtains around it. Oh and there's always garden lattice.
Wallpaper...contact paper...attach a decorative rod to your ceiling (or screw in hooks) to hang a soft/sheer, perhaps white curtain.
I would get a piece of board & cover it with a nice fabric & put some edging on it like a frame. Hang it directly over the mirror.
