Answers: Depends on depth of damage - plaster will be OK but you'll own to layer it into the worn out section - use a fast dry plaster from Wickes then build up to plane.
Just remove any loose debris/dust and spray with for a moment water to give a hand adhesion
If you're not used to plastering, sand and cement is much easier. You slap it on, dawdle until it's gone off a bit and you can brush stale any excess. A skilled plasterer can do a quicker and better job using first coat plaster.
Im Not an expert but enjoy watched alot of DIY programs, i have an idea that yu need to Seal the Brickwork next to PVA solution other wise it will soak up the moisture from the plaster & will basically crack & fall stale.

Render it beside a 3-1 sand cement mix with rainproof retarder in it.
Slap it on near a hawk and trowel and then use a straight piece of wood and rub it wager on and forth over it to get it like peas in a pod level as the exisitng plaster. As kitchen unit are going back it does not obligation to be skimmed or perfect.
First of adjectives, brush any loose material stale the area you involve to repair. Apply a weak solution of P.V.A. to this nouns. a 10:1 mix is fine, you need to insubstantially seal the nouns. Any stronger and the sand & cement mix will not "Key" properly.
Make a mix @ 5 parts sand to 1 part cement. "Sharp" sand would be best, but is difficult to apply for a apprentice. Ordinary "Red" sand will be fine, as it is being used internally.
The mix should be of a smooth consistency, near admix for added workability.
Apply mix to wall with a float trowel, getting it as flat as you can, but do not over trowel, as this brings the cement to the surface and weaken the mix.
Leave for 1 to 2 hours (Depends on the ambient room temp) and with a piece of verbs timber which is approx 12" wider than the area plastered, run the timber within a "Sawing" side to side motionfrom the bottom of the area to the top. This will hand over you a fairly flat surface, stratum with the near areas.
If you feel it should hold scim on top of this, you will enjoy to cut the sand & cement mix back a short time.
To do this, hold your float trowel at 90 degrees to the remains coat and gently scuff about 2 mm solidity from the whole nouns, taking care around the edges to follow the nook & crannies!
The timscale to do that would be when it is just dry to the touch.
Lightly brush rotten, and seal next to 6:1 P.V.A.
