I painted 2 walls today with Behr eggshell paint in classic taupe..?

Yikes,,, all paint should be two coated no matter the disclaimers. I use Behr almost exclusively, but the formulations are pretty standard in all quality paints.
Never go FLAT,,, and my personal preference anywhere is SATIN. It cleans as well as semi gloss and is as durable.
Paint is formulated in its grades/ designations, with different amounts of pigment, polymers and other agents to aid in cleanup and durability. FLAT, and even eggshell are more porous than SATIN and do not cleanup as well,,,although if you applied a flat over a light enough color with a large enough nap, you might get away with one coat, I don't advise it.

You probably just need another coat. I have used the same exact brand and finish (although a different color) and I didn't have that problem at all. Also, could it just be the lighting that is making you think it is blotchy?

if you repaired drywall problems, you need to prime BEFORE you paint. spot priming anywhere that you spackled with a latex primer will help, then repaint the wall. the blotchy look that you describe is called flashing, where the eggshell looks different on the spots that you fixed. also, try using better paint. Behr is one of the worst paints on the market
