what is a good distance between pendent lights and the counter top?

I assume you mean pendants over your island. If that is the case. The standard distance would be about 32 - 36 inches up from the counter top. Having said that, if you or your partner are taller people you may want to have the lights a little higher so you don't hit your head on them. On the otherside of that. If you are a little shorter you may want to have them hang a little lower. But most important. They are all adjustable. Play with them to find a heigh that is comfortable for you and make sure you can't see the light bulb when you are sitting at or working at the counter. That can be very glary and distracting, and then set them at that height.

By pendant lights, I would assume that your talking about the "puck" lights, that operate on a transformer and gets VERY HOT!!...
Eighteen inches or less, would be ideal.
I have those "puck lights" in my basement over my work bench...But, I have them suspended on long 3" dry wall screws! The heat that they put out is tremendous and I wouldnt want them too near any wood as they actually get too hot to handle, and wood would start to smolder, in my opinion... after prolong usage...
