Can you change the color of a granite countertop?

they can be polished down to their original color and stained or painted with epoxy to the color you want. its a long and expensive process. sometimes it can cost as much as a another top or close to it. i've retired from historical restoration and it is a process to do. you can either shop around and get another one or even get the measurements and find ones that have been taken out of homes and the one you like can be bigger as you can have it cut to fit for the fraction of the cost.

The granite color, itself can't be changed, but you can overlay it with cement. This is done by building a frame around the countertop and pouring cement over the granite. The cement can also be stained before pouring to reflect your taste in color. It can be finished to your preference: ie rough, smooth, or with a pattern. This can be costly, but you could do it yourself by consulting an expert for tips.
Granite is so dense that it probably isn't sealed to begin with. There is simply nothing to seal. Granite has no pores to fill.
You either live with it. Replace it, cover it or try to paint it. Trust me, painting is not going to work out very well. Even an epoxy paint will flake and chip in time.
The only economical way to cover it would be with laminate and that seems a shame but that is probably what I would do if I couldn't bring my self to replace it.
I don't know how long you expect to live in this house but I believe if it were me, I'd bite the bullet and replace the stuff. You only live once and why not enjoy your house while you do!!
