just secure a 2x2 to the ceiling and the top of the cabinet and them fasten your drywall to it. Make sure that the face edge of the drywall if flush with your cabinet face and the 2x2 on the ceiling are plumb with the cabinet.

No, you don't have to remove the drywall as long as you have nailer behind it (joists run perpendicular to cabinets). Just use a long fastener like a 16d nail or 3" drywall screw. And if helps you sleep at night, use some construction adhesive. The soffit is just a finish detail, not structural. It only has to support it's own weight.
