If it's latex paint, sure, I do it all the time. If it is a humid day, I try to run a ceiling or other type of fan. You can gently touch the paint after 1-3 hours to see if it's dry. If it's still tacky, I wouldn't do it, because you risk the first coat coming off when you start your rolling. Usually I trim out a room, then paint, then trim it out and finish the second coat.
