Anyone know which type of countertop material is best? Marble, soapstone, granite?

Granite is my personal favorite. Gorgeous, easy to clean, great for kneading bread dough on. You can chop things right on it if your cutting board isn't big enough. It will dull your knives, though, eventually.

Marble is beautiful and I have it in my bathroom, but would not recommend it for a kitchen. It stains easily, clouds easily, needs to be reconditioned and sealed often. Soapstone and granite are both good choices. I personally have granite and love it. It was sealed and waxed upon installation 8 years ago and still looks great. It can take heat, cutting, and abuse without causing damage.
granite is best for a kitchen counter top...marble is good in a bath or a non-food location, see granit is less porous than marble...so bacteria can get in marble easyer then granite which is a denser stone...
Soapstone is less likely to fracture than granite and both are better than marble. Granite has more variation in it and is more visually appealing that soapstone. As you garnered from the answers Granite is popular and more people are updating their counters with granite. Be different, go soapstone. Near seamless installs and sinks can be integrated in soapstone making it look all monolithic.
Believe it or not concrete is getting really big (Nashville Tn) for counter tops. You can have it stained to the color and design you want. Very sturdy and you cant cut it up.
Marble and soapstone are soft stones, Granite is tougher, do the math.
