Any structural difference between 2x4 boards and round poles?
It seems like option number two would be easier. Not only because it's no problem to handle that size of tree with hand tools, but also it only takes 5 years to grow them. Whereas, in option number 1 you have to wait another 50 - 70 years to grow trees that size.
So the question is why do people only use older trees to get lumber? Is there some structural difference?

well, older trees r larger there fore u can harvest these trees and get more lumber per tree........more profit! also younger cut trees dont have the same amount of growth rings which means strength! but it comes down to money...they cut the trees that will produce the most lumber for retail.....

People use the older trees because they produce more wood than the saplings, and the older wood has more time to grow strong. and by the time they cut down all the old trees in the forest the younger trees have had time-o-plenty to grow larger.
