What can I grow now?
I'd like to grow from seed if at all possible.

you are now looking at planting spring veg cabbage & cauliflower but later on about october you can start to plant broad beans and onions for next year

Someone recently managed to grow a banana in the UK.
Bananas can be eaten I believe. 99% sure.
Any of the winter vegetables go well in pots as long as the containers are big enough, try brussel sprouts, swiss chard, spinach,bok choy (asian greens) cabbage, cauliflowers, that sort of thing, whack in some onions and garlic. Happy gardening.
Now is the time to plant peas, collards, carrots, mustard greens, corn, turnips, beans, spinach and just about any grean leafy veg. They usually take about forty to sixty days to mature and where I am that just about coincides with the first frost. Swiss chard, kale, fall tomatoes, early eggplants, just check the seed packets for when the fruit or veg matures, and plant accordingly. Yours being in containers, though, if you have an unexpected freeze you can bring them in while its cold.
My advice is for North Central Texas. Zone 8
