Most dwarf apple trre bear in the first 2 yrs. However, I prefer to put oof the small harvest for a bigger one. I prune the trees so that I have bearing branches 2 ft apart vertically, and I weight them to bring them down to below a 60 degree angle, and closer to horizontal. Fruit trees bear MUCH better when the branches are closer to horizontal.. in addition, the extra weight helps the branches get stronger, to support the fruit ot come.
On trees that tend to bear a lot of fruit, I knock off 70% of the fruit, leaving 1 fruit per 8-10 in of branch. This way you get bigger fruit, and the tree bears well the next year.
On the subject of spraying---you have to do some research. Look under Pomology. There are management programs that help you do the least spraying possible, while knocking back the diseases, and pests to the greatest degree possible within that program.
