Beer works great for snails and slugs. Put a bowl of it near the lettuce and they love it. They drown an enjoyable drunk death!
With grubs and caterpillars I've found spraying a detergent solution on the leaves seem to keep them off. Make it very weak, and use a neutral pH detergent.

If you an animal/ pet person, I have a perfect solution for you that won't put chemical on your food. Buy a hedgehog! They are insectavors and if you fence you garden properly, it will be happy, and so will your plants. Check if they are legal in your state. We have one, but they do have salomana in their system. We have never had problems with that, just good washing. People in Sweden try to lure wild hedgehogs into their gardens to eat the bugs! Good luck.

Sounds like slugs. Diatomacious earth spread around the plants will help, also stale beer in a low container.
to kill grubs you can mix 1/4 part mineral oil and 3/4 part water and pour it on the ground. this kills/drives away grubs thus freeing you of skunks also!!
