How do I stop a cat using my palm tree as a scratching post.(apart from killing it).?

Buy a water bottle. Squirt him (with water) in the face everytime he does it. He'll get the idea.

It sounds crazy but put some aluminum foil or mylar sheets loosely around the tree and the cat will not want to touch it. There is also a Kitty NO! type spray available at the grocery store or at pet stores - it has a slight inoffensive odor to humans but cats really don't like it. You could spray the trunk of the tree with it.
There is a product called Bitter Apple. They make a spray that is safe for plants. It can be found at most pet stores and on-line. And loud noises and a spray bottle every time you see the cat nearing the plant. I'm talking an industrial spray bottle set on a powerful stream. It is enough to startle the cat and be uncomfortable, but not injure them.
Find where else the cat scratches, and buy the best sisal scratching post you can find, rub it with Catnip, and the cat will never scratch anywhere else.
