I'm guessing you parsimonious Yew trees (Taxus sp.)? Young trees can be shaped in winter near a hedge cutter or shears. With matured trees you can remove branches by hand near a bow saw or loppers to get the desired shape or rmove unwanted growth. The great entity about Yew is that they can be cut support really hard and will still rest, so you could cut branches right back to the trunk and it'd start sprouting again subsequent spring.
