When do you pick bananas from trees?

Bananas are the only fruit that ripen better off of the tree than on the tree. They are picked as soon as they reach full size. They are then shipped o wherever, where you you buy them and then shelf ripened.

Export bananas are picked green, and then usually ripened in ripening rooms when they arrive in their country of destination. These are special rooms made air-tight and filled with ethylene gas to induce ripening. Bananas can be ordered by the retailer "ungassed", however, and may show up at the supermarket still fully green. While these bananas will ripen more slowly, the flavour will be notably richer, and the banana peel can be allowed to reach a yellow/brown speckled phase, and yet retain a firm flesh inside. Thus, shelf life is somewhat extended. The flavour and texture of bananas are affected by the temperature at which they ripen. Bananas are refrigerated to between 13.5 and 15 °C (57 and 59 °F) during transportation. At lower temperatures, the ripening of bananas permanently stalls, and the bananas will turn grey.
when the ridges of the individual fruits round out, bananas can be picked and tied up to ripen in the carport or shady area. ( away from critters) Bananas are propagated from the croms underground and take 12 to 18 monthes to produce fruit. The male blossom forms at the end of the stems and female at the top. If you leave bunches on the plant the skins will split. I have to be honest in that I do not know how "rounded out" the ridges of the fruit should be. Just of interest the fruit we eat is steril and the little dots in the centers are vestiges of seeds.
Some serious tips for bananas...I lived and worked on a farm in Costa Rica for a few years, harvesting bananas nearly every day.

First, let the fruit swell until the ridges become rounded and the fruit is of typical size (familiar). Wait for the daytime leading into the full moon. On this day, cut off the flower head (purple-red tip). Wait for one or two weeks and when you notice even a slight change in the color of banana from deep green to pale green, cut the banana plant down.

This is a tough one for some to understand...a banana will only produce one rack of bananas...period. But the bonus is that the "hijos" or little trees (colms) that form at the base of the tree trunk can be separated and transplanted to grow a new tree or trees.
