The answer to your question depends on what you're using the evergreen for, and where you'll be growing it. I'll give some examples for colder climates like Michigan, USA.
Evergreen trees that are fast-growing include Norway Spruce, Concolor Fir, and many pines like White Pine and Red Pine. Most of these species grow at least 2' per year in height, and get to be about 40' tall or more. They'll also be about 30' wide when fully mature, except the Concolor Fir, which will be only about 20' wide. Whichever evergreen tree you plant, expect this growth rate only after it's about 4-5' tall. Before that, most grow only a few inches per year.
Most of the evergreen shrubs like Nest Spruce, Boxwood and Rhododendron are slow-growing (2" to 6" per year), but can be worth the wait. You may be able to purchase some of these in larger sizes, but be prepared to pay for the growing time already spent in the nursery! Some arborvitae grow about 6-10" per year, while some of the Euonymus species will grow faster than that, and many of the Yews grow up to 12" per year. Holly can be a nice option when growing in the proper conditions.

We like boxwoods. It's an evergreen shrub that provides a traditional look. They can be pruned to various shapes or you can leave them in a natural form. They are also tolerant of a variety of soil conditions and lighting. They grow at a relatively nice pace.
