Why is Orange Juice Yellow When Oranges Are Orange?
Answers: Some of the color in oranges (and other citrus fruits) is contained contained by the walls of the juice "vesicles". The vesicles are the small sac that hold the juice inside of an ginger. When you squeeze the juice out of the red, you are breaking the vesicles, releasing only the liquid.
If you want to have more colorful ginger juice, try squeezing a few tangerines along next to your oranges. Mandarins have much dark juice color. You will also create some interesting flavors by blending different juice.
