What's an easy, virtually carefree crop for one person in North Texas?

How about wildflowers? They're beautiful and the seeds are cheap. Wildflowers grow anywhere!
What about sunflowers? They're beautiful and require little care. When planting them, plant 1 to 3 feet apart. They take about 70 to 90 days to grow in sunny climates. Beware though, they can attract birds and small rodents (like any crop). Hope this helps.

I don't know for certain about crops, but there are a couple of other potential options. First, you might be able to turn it into CRP land (Conservation Reserve Program). I don't know all the details about it, and you might not have enough land, but it might be something worth looking into. Basically, the government will pay you to allow free growth of natural plants. The purpose is that wildlife will have more habitat. I believe CRP land is contracted for seven years at a time.
Otherwise, you might think about getting a couple of cattle and allowing them to graze the field. It would help keep the grass short, but you would need to erect a fence and a shelter.
