You use the same toilet, You get an off set wax seal flange, Install that reinstall you crapper and bang, It is now stood off the wall 1 1/2 and everything will work.
This doesn't help your toilet question but wanted you to know we put sheet rock on our brick walls when we closed in the carport. We bought concrete cement (came in a calk tube). Ran it all over the sheetrock then stuck it on the brick. Still had to put the tape up and sand the joints but after 3 years its still there.
Please provide more info. on conflict between toilet and back wall, as I do not understand the need for a flat back. When you say flat back, do you mean the bowl, tank, or both? Is the conflict created because you will not have enough space between back of tank and new furred out wall. You should need only 3/4" min. for furr-out - 1/4" sheet rock glued onto 1/2" furring strips should work. Make sure you get green sheetrock, as it is made for water exposure.
