The instructions that came with my GE profile side by side is that the fridge should be set at 40 degrees and the freezer at 0 degrees for best performance.

It really depends on preference and what you keep in it. That's why they have dials to change it. In reality, the fridge should be below 32 as to not freeze things, but not generally warmer than about 42. I like 35-36. I also like my ice cream harder, so I keep my freezer around 20, but anything under 30 will suffice generally.
Zero to -10'F for the freezer, 38-40 for the fridge. Adjust your controls, let it stabalize for a while, then check the temp. Adjust as needed to get the propoer temps.
