A check tap between the pump and the well riser holds pressure surrounded by the tank. If nearby is a pressure gage, watch it. If the check spigot isn't closing, the pressure will drop, thus starting the pump again.
The check valve can be disassembled and cleaned.
Sounds resembling your pressure tank may enjoy a pin hole leak surrounded by the diaphram. if it's the check valve, you would hear sea flowing through it.
If it was your check tap, then you would hold to prime the pump each time to use it.
