almost everyday my A/c unit fills up with water and leaks through my ceiling, even in dry climate, whats up?

Your air handler should have a condensate pump. Look for a small plastic tube, or a small PVC tube running to a pump. The pump's pick up is probably dirty or perhaps the pump itself is no good. I usually tell people to replace the pump if it's older than 10 years. The other cause of this problem is condensation around the air handler. When air comes into contact with the outside of the cooling coil box, it will turn into water. Make sure this box is properly insulated.

If it is a reg ac, you have a lot of condensation, but if it is an Evapo. Water cooler, you may have a water line plugged up, get it checked out or soon you will have a three-fold problem, ceiling and roof repair..

Your condensate line is plugged up. Take the line off and blast it out with a garden hose. This may involve cutting it off with a hacksaw. Put it back together with a 3/4 coupler. Don't glue it, you may have to do this again.

There should be a pipe that drains the water from handler. Make sure that pipe is not clogged. Also as long as your AC is on it is going to cumulate the water no matter what kind of weather it is.
Check to make sure any type of condensate drainhole is not blocked, or if there is a drain hose, see that it is not clogged up. If it is blow it out with air, garden hose, or run something like a stiff wire thru it to clear any blockage. If it is a window A/C, check to see that the trough from the front to the back of the unit is clear. Some units will drip drain out of a drain hole, some use that water to sling the water onto the condenser (warm) coil to help cool that down while evaporating the condensate, hense the name "slinger fan blade". Also check to see if the evaporator, the cooling coil in the front, is iced up. If it is, you could have an air blockage, ot even a low refrigerant charge, which will cause it to freeze/ice up.
