Why would a pilot light not stay lit on a water heater? It will light and then later go out again.?

the problem you r having is your thermocoupling has gone bad... go to your local hardware store and purchase a new one... to replace it ... at the bottom of the heater is the thermostat control box.. on the bottom of this box (far right) is a metal gas line(small) unsrew this line from the heater. this is the thermocoupling. install the new one and srew it into the spot where the old one was. relite the heater and your done.. if unsucsseful call a plumber... good luck

This might sound like a dumb answer... but maybe the wind is blowing it out. Is there a breeze where your water heater is located?
It needs cleaning, over time very slim coats of dirt, almost like a varnish, builds up because it is a residue of the flame. You need to have it cleaned or even a new one installed
this has happenned to me a few times.
You probably need a new thermocoupler.
Plugged orifice on the pilot line, debris in your gas line causing pressure drops, bad control valve that supplies gas to the pilot light, wind. Have a professional check it out. Gas can be very dangerous.

Seriously, call a professional. Anything to do with a pilot light not staying lit, or gas leaks, etc. can be potentially *very* dangerous and need to be handled by a professional. Your gas company should handle it, or give you the name of a service company to call. Good luck -- and if you smell gas, RUN, do not turn on a light, do not use a phone, just RUN!!
