the easest way is to do a temp. split if the system is up and running.. window units should be 25-30 deg. colder supply air vs. return. central unit should be 15-20 deg. if you are thinking about charging yourself.. its a bit more complicated and i might remind you that handling refrigerant without the proper liscensing is punishable with a 10,000. fine and if you dont do it right, you can ruin a comressor.

Do you have a shrader valve? if not, you'd have to install one and then you'd have to recover all the refrigerant. Do you have a recovery unit? If not, call an HVAC tech.
