What is wrong with my air conditioner?

The reason why the water has increased is because there is more humidity in the air. The more water it pumps out, the better it is working. So don't worry. And as long as water is getting pumped out, it means your AC's compressor is working fine.
And ofcourse when humidity is high, it's gonna take longer to cool than ususal. I think it's only the change in weather.
But if you think it's neither one of these, then you can get it checked.

Try set the thermostat higher (warmer). Too much condensation is definitely due to high humidity. If you have option, change to internal circulation of air (that is: without drawing outside air into the room) then it won't probably have to deal with that much of humidity.
Clean the coils with a fine tooth comb, alot of water is commom for this kind of weather, do not have any windows open when running a air conditioner. E-mail if any problems.
you are running low on freon
when ac run low on freon they will freeze up (build up ice on the coils)
this explains why it aint working as well and the extra water (when the ice melts)
Most likely the filter and unit is dirty. Change filter and clean unit.
