I plantedsix privet bushes several years ago; three variagted and three standard green. I planted them in alternate colours and they are growing into an excellent hedge, which is starting to look spetacular. However, I have just noticed that the standard green are now growing varigated leaves. Does this mean that the bushes have cross pollinated and that I have inadvertently introduced a new variety of privet.

...no it just means your bush needs cutting.

Sounds like it.
Usually the problem is with variagated plants reverting to their un-variagated form. No the bushes will not have cross pollinated because any cross pollination will only apply to the seedlings. Are you sure that the variagation is not from a branch that has grown through from one of the other bushes?
Whether the bush has 'turned' or the branch is growing through, the correct thing to do is to trace the branch back as far as possible and cut it out.
