How and when do you get the sunflower seeds from the sunflower?

I have two huge sunflowers (it's the first time I've ever grown them) and I want to learn how to harvest and prepare the seeds.

Just did this myself :) After the heads have dried cut them off and put them in a paper bag for a couple of weeks in a dry place. Don't cut the heads of any sooner! They have to completely dry for the seeds to harvested. Any sooner and you won't have seeds, just empty shells. If you find that the seeds are falling out before you can cut it down place some mesh around the heads to prevent losing the seeds. BTW, birds love them, so you might want to cover them up anyway! Enjoy your harvest :)

cut the heads 6 inches below the heads when they are 50% dry if you cut too early, the seeds won't be plump but not totally empty, put them in a fine plastic mess to dry them up this is to protect the seeds from birds and from rotting. crunch the heads with a gloved hand when they're are dry, put the in a flat surface to segregate the seeds from the dried petals and leaves and the plump seeds from the empty ones. store them in plastic containers or you can bake them in a microwave, you can eat the seeds as you watch tv instead of popcorn.
