I don't know about a garden saving the earth, but a connection with your locale, the soil, and forage plants in your area would likely give YOU a chance to survive when the food system implodes.

How WOULD you feed yourself if the twinkies at the store were all gone and no more were coming? Without your garden connection ... or some other form of food security like a large, healthy forest system nearby, you can pretty much bend over and kiss it goodbye.

It's a nice thought, but no, I wouldn't agree. The amount of pollution created by food processing or transportation I would imagine is relatively small compared to all the other industries put together.
