I'm a gardener. Depending on which variety, yes.
(1) Cynara cardunculus (Cardoon) isn't edible.
(2) Cynara scolymus (Globe artichoke) is edible.
Both look similar so beware. The leaves are slightly different.
Leaves on (1) are about 50cm long when mature, leaves on (2) are a bit longer at 80cm long when mature. Both are silvery grey although (1)'s leaves are more spiky than (2) woolly.
Flowerheads on (1) are smaller at 4-8cm across, whereas (2) has larger flowerheads at 8-15cm across.
If in doubt DONT EAT THEM.

yes, but you must clean out all the fibres, and just a tip, when cutting a artichoke they go black very quickly, just rub over the area you have cut with a piece of lemon.
