If your looking for a serious answer, that's simple. Cacti live and thrive in an arid environment with little year round rainfall, making it neccessary to store water during long periods of draught. While the size and girth of a castus depends on the species, they all use a similar membrane to retain water. Retaining water means bloating, hence the fatness.
