What you saw was not a mini pineapple, but a baby pineapple. The new pineapple grows from a stem in the center of a mother plants rooted top. it looks just like a mini pineapple when small, but soon grows into a normal, full-sized version of it's parent plant.
Easy & fun to grow yourself. Buy a real fresh young pineapple and lop off the top leaves leaving about 1/2 inch of fruit still connected. some root it first in a deep sided plate of water, then after roots form plant in some very rich potting mix in a larger sized flower pot.
others like to root it directly into the potting mix. both work equally well. keep in mind the size of a full grown pineapple when picking a pot. you don't want to transplant if you can avoid it and you don't want the top heavy fruit to cause the pot to fall over.
if you have kids, it's a lot of fun watching it grow. heck, even without kids, it's fun to watch it grow. have fun.

If you cut off the top of a fresh pineapple and plant it you can grow your owm pineapple plant. Keep about a half inch of the flesh of the fruit attached with the leaves. They like rich soil and lots or sunshine. You might have to wait a season or two or plant several pineapples to produce baby pinapples.
