What is a variety hood for?

I am moving out of my first apartment, which came furnished near large appliances (oven, fridge, etc.) into a alien apartment for which I need to buy exotic appliances. I don't quite capture what a "range hood" is for. Do I necessitate to have one? What would evolve if I didn't have one over my stove/oven?

It seems close to it keeps the kitchen from getting as hot when it sucks up the steam but it could a short time ago be my imagination. There's also micro-hoods that you can mount over the stove. It's just a microwave that vent the steam from the stove.
